Sangai Chef: Season 1, cooking competition at Hapta Kangjeibung on November 21 2018
Sangai Chef: Season 1, organised by the Exotic School of Cooking, started today at the opening day of the Manipur Sangai Festival 2018 in Hapta Kangjeibung. This cooking competition which is set to
be held from 21st to 29th November aims to put Manipuri Cuisine in a culinary map by unearthing the exotic food of the Manipuris and present it to the world with an aesthetic presentation.
A total of 10 cooking enthusiast are contesting in this one of a kind competition, however one contestant will be eliminated after every competition round starting day 2.
Each day’s schedule consists of a master class by an experienced Chef followed by the competition round where contestants will be using their knowledge, experience and skills to prepare an authentic dish using
only locally sourced food items.
A panel of expert judges from the industry are empanelled to judge the competition based on taste, presentation, authenticity, food knowledge and hygiene.
Our main panel includes – Chef Trimran Saka, specialist in oriental cuisine; and Chef Surchandra Ningthoujam from Imphal Hotel by The Classic. Mrs. Sanyaola Kengoo Raman, Nutritonist was our Guest Panellist
today.

Some of the indigenous items prepared by the contestants in Day 1 include –
“Chagempombi”,
“Ooti Ashangba”,
“Nganum”,
“Oksha-Thoiding thongba”,
“Hawaijar-Oksha thongba” garnished with shredded-dry bamboo shoot ,
“Yarra-oksha”,
Ginger-Pork,
Chicken cooked with crushed rice,
Chicken with “Ann-Maroo”,
“Kanglayen Paknam” etc.
All contestants were selected after auditioning prior to the event, so it is no longer open for entry.
However, for the next eight days, visitors of the Manipur Sangai Festival 2018 are given liberty to check out the various locally sourced food items on display at the pantry, the typical indigenous
kitchen set up, and witness the process of cooking authentic Manipuri cuisines mixed with a little creativity from the contestants.
